Team Leaves for Lyon
It has been a long year of preparation and anticipation. The competition is January 25 – 26.
Dear Friends of World Pastry Cup Team USA 2009, We wish you all a Happy New Year and great success throughout 2009. It has been a long year of preparation and anticipation. Right after Christmas, we had a final practice and packed our crates (1 ton!) for Lyon.

One For All and All For Food Arts

Team President Hsu: "As part of our training for the 2009 Coupe

to prepare for the competition, which takes place in Lyons, France."

2009 Team members introduced
The members of Team USA were chosen after an extensive application process
culminating in final indepth interviews with each finalist during the
selection weekend sponsored by Valrhona at L’Academie de Cuisine
in Gaithersburg, MD. The team represents the most talented pastry chefs
working in the US today.

Meet the Members of TEAM USA Who Will Compete for the Distinction of
World’s Best Pastry Chefs in the 2009 Coupe du Monde de la Pâtisserie
Brooklyn, NY – Established in 1989, the Coupe du Monde de la Pâtisserie,
aka the World Pastry Cup, is the
most prestigious event in the industry. The Coupe du Monde de la Pâtisserie
(CDM) takes place biannually
in Lyon, France during SIRHA, the International Hotel Catering and Food
Trade Exhibition.

Shadowing
the
US World Cup
Team to Lyon
Until the World Cup event in January 2009,
and in each of the next five issues, Pastry’s Best will be following
the team’s
progress with contributions from coach En-Ming Hsu and the reflections
of team alternate Jim Mullaney.
The selection of the 2009 United States World Cup team
took place at L’Académie
de Cuisine in Gaithersburg, Maryland on November 3 and 4. The following
pastry
chefs made the team and will represent the U.S. in Lyon for the finals
of the
World Cup of Pastry.
